These pancakes are SO delicious. You can't go wrong with a classic! Ingredients: 85g melted butter (cooled slightly) 480ml buttermilk 280g plain flour 67g of caster sugar 1 and 1/4 tsp of baking powder 1/2 tsp bicarbonate of soda 2 eggs 1 tsp vanilla extract Method: Add and mix all dry ingredients in a bowl Add all wet ingredients to a separate bowl or jug (so it's easier to pour) Add wet mixture to dry mixture gradually so no lumps form Add a little oil to a pan and heat on

Gluten Free Coconut and Dark Chocolate Pancakes
I saw someone making these and thought coconut pancakes are a great way to try something new. So I tweaked the recipe and hey presto! These are light pancakes but surprisingly quite filling. This recipe makes around 5 pancakes and each pancake contains around 150 calories, 6.5g of protein and 3.4g of fibre!
