I saw someone making these and thought coconut pancakes are a great way to try something new. So I tweaked the recipe and hey presto! These are light pancakes but surprisingly quite filling. This recipe makes around 5 pancakes and each pancake contains around 150 calories, 6.5g of protein and 3.4g of fibre! Ingredients: 1/4 cup of coconut flour 3 eggs 2 tbsps melted butter 84ml of milk 1 tsp of gluten free baking powder 1 tsp vanilla extract 1 tbsp caster sugar 1 tsp milled f
