I saw someone making these and thought coconut pancakes are a great way to try something new. So I tweaked the recipe and hey presto!
These are light pancakes but surprisingly quite filling.
This recipe makes around 5 pancakes and each pancake contains around 150 calories, 6.5g of protein and 3.4g of fibre!
Ingredients:
1/4 cup of coconut flour
3 eggs
2 tbsps melted butter
84ml of milk
1 tsp of gluten free baking powder
1 tsp vanilla extract
1 tbsp caster sugar
1 tsp milled flaxseed
good sprinkle of dark chocolate chips
Method:
Whisk the eggs in a large bowl until frothy
Add all ingredients apart from the chocolate chips, and whisk
Add chocolate chips and fold in
Add oil to a pan on a low heat
Add mixture to the pan cooking one at a time. Wait until the bubbles start to appear. This can take a LONG time so please be patient but they are worth the wait.
I topped mine with Steph Jayne Nutrition's (over on Instagram) super tasty activated vanilla almond butter, Greek yoghurt, strawberries, blueberries and maple syrup.
