Gluten Free Coconut and Dark Chocolate Pancakes

I saw someone making these and thought coconut pancakes are a great way to try something new. So I tweaked the recipe and hey presto!


These are light pancakes but surprisingly quite filling.
















This recipe makes around 5 pancakes and each pancake contains around 150 calories, 6.5g of protein and 3.4g of fibre!


Ingredients:


  • 1/4 cup of coconut flour

  • 3 eggs

  • 2 tbsps melted butter

  • 84ml of milk

  • 1 tsp of gluten free baking powder

  • 1 tsp vanilla extract

  • 1 tbsp caster sugar

  • 1 tsp milled flaxseed

  • good sprinkle of dark chocolate chips


Method:


  1. Whisk the eggs in a large bowl until frothy

  2. Add all ingredients apart from the chocolate chips, and whisk

  3. Add chocolate chips and fold in

  4. Add oil to a pan on a low heat

  5. Add mixture to the pan cooking one at a time. Wait until the bubbles start to appear. This can take a LONG time so please be patient but they are worth the wait.


I topped mine with Steph Jayne Nutrition's (over on Instagram) super tasty activated vanilla almond butter, Greek yoghurt, strawberries, blueberries and maple syrup.
