Wholewheat Matcha Pancakes

These pancakes are delicious and SO tasty! I love wholewheat pancakes because they have so much more flavour, and contain more fibre. Win win!













This recipe makes around 5 pancakes and each pancake contains around 5.5g of protein, 1.4g of fibre and 140 calories.


Ingredients:


  • 140g wholewheat flour

  • 1 tsp baking powder

  • 1/4 tsp bicarbonate of soda

  • 124g Greek yoghurt

  • 150ml milk

  • 30ml maple syrup

  • 1 egg

  • 1/2 tsp vanilla extract

  • 1 tsp milled flaxseed

  • 1 tsp chia seeds

  • 1-2 tsps of matcha (depending how much you like matcha)

  • 21g melted butter (cooled slightly)


Method:


  1. Mix all dry ingredients in a bowl

  2. Add the egg, vanilla, melted butter and stir

  3. Add the Greek yoghurt and stir until combined

  4. Add the milk gradually so it doesn't go lumpy

  5. Oil and heat a frying pan cooking one at a time on a medium heat

  6. Flip once you start to see bubbles forming on the top

  7. Serve with toppings of your choice. Mine were topped with Greek yoghurt, nutella, peanut butter, strawberries and flaked almonds
